Japanese Ice Cream with Truffles and Gold Leaf Breaks World Record for Most Expensive Dessert

A Japan­ese ice cream brand, Cel­la­to, has bro­ken the world record for the most expen­sive dessert, with a sin­gle serv­ing cost­ing over $6,000. The frozen treat, named byakuya, which means “white knight” in Japan­ese, has been offi­cial­ly cer­ti­fied by Guin­ness World Records as the prici­est ice cream in the world.

The gela­to is fla­vored with white truf­fles sourced exclu­sive­ly from the Ital­ian town of Alba, which is home to some of the world’s most cost­ly truf­fles. The dessert is also adorned with an edi­ble gold leaf, two types of cheese, and Sakeka­su, a paste-like ingre­di­ent derived from the process of sake-making.

The company’s mis­sion is to cre­ate a “culi­nary adven­ture that merges Euro­pean ingre­di­ents and tra­di­tion­al Japan­ese foods,” and it has hired Tadayoshi Yama­da, head chef at RiVi, an Osa­ka-based restau­rant known for its French-Japan­ese fusion cui­sine, to lead the project.

Cel­la­to has laid out pre­cise steps for tast­ing the del­i­ca­cy, instruct­ing cus­tomers to pour in the white truf­fle at the right tex­ture just as the ice cream soft­ens up before mix­ing it with a hand­craft­ed met­al spoon giv­en to them. They are advised to let the ice cream thaw at room tem­per­a­ture or microwave it at 500 watts for 10 to 20 sec­onds if the tex­ture is too hard.

Although the Guin­ness World Records team has not had a chance to sam­ple the dessert, Cellato’s staff described it as “rich in taste and tex­ture” and rec­om­mend­ed pair­ing it with sake or a French white wine.

Cel­la­to plans to expand its prod­uct line to include Cham­pagne and caviar in the future.
